Apparently this is untrue. Justin informs me:
The pillow effect of salad packs is not because there has been a rotting of the salad its exactly the opposite. An inert gas is pumped into the pack after the oxygen has been evacuated to keep the salad from degrading. How do I know. I’ve been working on these systems as a specialist for the last 30 years!
