I haven’t made this yet but it looks good.
Bicarb is bicarbonate of soda, one of the ingredients in but not to be confused with, baking powder.
Rapadura is a more nutritious form of but is still a sugar so you could do better without it. Honey also has antibacterial and antimicrobial properties. If you substitute honey for rapadura you might need to extend the cooking time as it would add liquid.
If you are allergic to nuts or making it for kid’s school lunches you could skip the almonds.
