{"id":60769,"date":"2025-07-30T19:57:51","date_gmt":"2025-07-30T09:57:51","guid":{"rendered":"https:\/\/www.tomgrimshaw.com\/tomsblog\/?p=60769"},"modified":"2025-07-30T19:57:51","modified_gmt":"2025-07-30T09:57:51","slug":"chicken-and-veggie-bake","status":"publish","type":"post","link":"https:\/\/www.tomgrimshaw.com\/tomsblog\/?p=60769","title":{"rendered":"Chicken and Veggie Bake"},"content":{"rendered":"<p>I put together a recipe that my wife rated 9 out of 10 so here it is if you want to give it a try.<\/p>\n<p>Serves 8<\/p>\n<p><b>Ingredients:<\/b><\/p>\n<p>1.5 kilos chicken thigh fillets<br \/>\n500 grams chicken breast mince<br \/>\n8 small potatoes<br \/>\n1\/3 large sweet potato<br \/>\n3 carrots<br \/>\n1 cup peas<br \/>\n1 cup beans<br \/>\n1 large onion<br \/>\n1 head garlic<br \/>\n3 cm fresh ginger<br \/>\n1 tablespoons coconut oil<br \/>\n250 grams nut butter (peanut, almond or cashew)<br \/>\n454 grams coconut milk<br \/>\n60 grams sweet chilli sauce<br \/>\n250 grams hummus<br \/>\n250 grams tasty cheese<\/p>\n<p><b>Directions:<\/b><\/p>\n<p>Put a large and medium frypan on two gas jets at medium heat<br \/>\nInto the large one put the chicken thighs and turn occasionally until cooked<br \/>\nInto the medium one put the coconut oil to heat<br \/>\nDice the onion and add to the medium one, stirring frequently until browned<br \/>\nPeel and finely chop the head of garlic and the ginger and set aside in large mixing bowl<br \/>\nPut a litre of water into the kettle and bring to boil<br \/>\nWash the potatoes and cut into half cm slices<br \/>\nPut the water into a 3 litre pot<br \/>\nAdd the potatoes to the water in the pot<br \/>\nPeel the sweet potato and cut into half cm slices<br \/>\nAdd the sweet potato slices to the pot<br \/>\nCook until semi-soft<br \/>\nSome time around here pre-heat the oven to 150 degrees centigrade<br \/>\nGrate the cheese and set aside<br \/>\nGrate the carrots and add to the large mixing bowl<br \/>\nWhen the chicken thighs are cooked, drain and let cool<br \/>\nIn the same large pan cook the chicken mince<br \/>\nIn the large mixing bowl mix the carrot, onion, peas, beans, ginger and garlic<br \/>\nInto a blender put the hummus, coconut milk, sweet chilli sauce and nut butter<br \/>\nCut half the chicken thighs into slices about 8 cm thick<br \/>\nAdd them to a baking disk<br \/>\nAdd half the chicken mince to the baking dish so the bottom is covered<br \/>\nTo the baking dish add the next layer, half the carrot, pea, onion, etc. mix<br \/>\nThe next layer is half the potato and sweet potato slices<br \/>\nOn top of this drizzle half the coconut milk, sweet chilli and nut butter sauce<br \/>\nFinally sprinkle half the grated cheese on top of the potato layer<br \/>\nNow repeat the last five steps for the second half of the ingredients<br \/>\nPut in the oven for an hour<br \/>\nTake out, serve and relish the meal!<\/p>\n","protected":false},"excerpt":{"rendered":"<p>I put together a recipe that my wife rated 9 out of 10 so here it is if you want to give it a try.
