{"id":17733,"date":"2017-12-12T19:20:40","date_gmt":"2017-12-12T09:20:40","guid":{"rendered":"http:\/\/tomgrimshaw.com\/tomsblog\/?p=17733"},"modified":"2024-06-29T07:12:31","modified_gmt":"2024-06-28T21:12:31","slug":"savoury-pumpkin-spinach-and-feta-muffins-recipe","status":"publish","type":"post","link":"https:\/\/www.tomgrimshaw.com\/tomsblog\/?p=17733","title":{"rendered":"Savoury Pumpkin Spinach and Feta Muffins Recipe"},"content":{"rendered":"<p><a href=\"http:\/\/tomgrimshaw.com\/tomsblog\/wp-content\/uploads\/2017\/12\/SavouryPumpkinSpinachFetaMuffinRecipe.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter  wp-image-17734\" src=\"http:\/\/tomgrimshaw.com\/tomsblog\/wp-content\/uploads\/2017\/12\/SavouryPumpkinSpinachFetaMuffinRecipe-200x300.jpg\" alt=\"Savoury Pumpkin Spinach and Feta Muffins\" width=\"742\" height=\"1113\" \/><\/a><br \/>\nmakes 12 regular muffins<br \/>\n2 1\/4 cups (350g) diced butternut squash\/pumpkin<br \/>\n125g frozen chopped spinach or 3 cups chopped fresh spinach<br \/>\n1 small zucchini, grated<br \/>\n2 eggs<br \/>\n1 cup milk<br \/>\n1 cup (100g) crumbled feta cheese<br \/>\n1\/2 cup (50g) grated parmesan cheese or cheddar\/tasty cheese<br \/>\n2 cups (240g) gluten free plain flour<br \/>\n4 tsp baking powder<br \/>\nOptional: Salt and pepper, to taste<br \/>\nCook your pumpkin cubes by either roasting in the oven until soft and caramelised, steaming until soft or microwaving for 4-5 minutes or until soft and cooked through.<br \/>\nPlace your frozen or chopped spinach in a bowl and cover with your hot cooked pumpkin.<br \/>\nCover with cling wrap and leave to sit whilst your oven preheats and you prepare your other ingredients.<br \/>\nPreheat your oven to 180C\/355F<br \/>\nGrease a muffin tray or line with paper liners and set aside.<br \/>\nCombine your eggs and milk and mix in your pumpkin, spinach, zucchini and cheeses. Season with salt and pepper if desired.<br \/>\nMix in your flour and baking powder, mixing until just combined.<br \/>\nScoop your muffin batter into your prepared muffin tin, filling all the way to the top (as the batter is thick it won&#8217;t spill out).<br \/>\nBake your muffins for 20-30 minutes or until cooked through (a skewer inserted into the middle will remove clean and they&#8217;ll feel solid when touched on the top) and golden on top.<br \/>\nAllow to cool before removing your muffins from their tins and enjoying.<br \/>\nThese muffins can be eaten hot, room temperature or chilled depending on your preference and can be kept in the fridge in an airtight container for up to 2-3 days.
