So here&#8217;s one for a cold winter night.<br \/>\nI picked the guts of it off the internet a year or two back.<br \/>\nYou&#8217;ll need<br \/>\n2 large onions<br \/>\n2 tablespoons of coconut or rice bran oil<br \/>\n1 head of garlic<br \/>\nsome fennel<br \/>\n1 small sweet potato (or whatever other vegetables you have left over at the end of the week, tomatoes add some nice colour)<br \/>\n6 zucchinis<br \/>\na cup of tasty cheese<br \/>\n250 grams of Parmesan cheese<br \/>\n12 eggs<br \/>\na large frypan<br \/>\na large mixing bowl<br \/>\na large baking dish<br \/>\nPut the large frying pan on a medium heat<br \/>\nPut the oil in<br \/>\nDice the onions and put them in the frypan<br \/>\nChop the garlic and add it to the onions<br \/>\nFinely chop the fennel and add to frypan<br \/>\nGrate the sweet potato and add it to the frypan<br \/>\nTop and tail the zucchini, peel them then slice them 5mm thick and add them to the frypan<br \/>\nCover and turn down the heat<br \/>\nBreak the eggs into the mixing bowl<br \/>\nFinely chop the Basil<br \/>\nAdd salt, pepper cinnamon and Basil to the mixing bowl<br \/>\nStir well<br \/>\nAdd the parmesan cheese and stir well<br \/>\nGrate the tasty cheese and add to the mixing bowl and stir well<br \/>\nAdd a tablespoon of water to the frypan<br \/>\nGo for a walk with the dog and pick your wife up from the other side of the park (about 20 minutes)<br \/>\nTurn the oven on to 180 degrees Celsius<br \/>\nPour the contents of the frypan into the baking dish<br \/>\nAdd the eggs and cheese over the top of the veggies.<br \/>\nPut in oven for 40 minutes or until golden brown.<br \/>\nServe with some baby spinach leaves or lettuce or&#8230;<br \/>\nEnjoy!<br \/>\nCan be eaten cold for lunches or unlike many egg dishes, survives reheating really well.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Chris asked me a while ago to share more of my recipes.
